Easy Homemade Pineapple Whip.

Sweet, sweet summertime. There are many things I love about you. The fresh garden harvests, late nights on the deck, beautifully clear night skies, lake and river time, but most of all ICE CREAM!! Yes, those of you who know me well, know I LOVE ice cream. If I could have it every meal in the summer without nutritional consequences, I would.

So many memories attached to the frozen treat. One of my favorites to reminisce about would be the summer creek swims. Every summer my mom would drive us to varying creek spots to swim. See, I grew up on a farm, WAY down a dirt road, with very little lakes or rivers nearby. But we had all the woods and creeks you could ever desire. Most of the creek swimming holes were less than twenty minutes away and were very popular for the locals. A tradition my mother and I had would be to stop for ice cream on the way home at a tiny gas station. Nothing made ice cream more desirable than swimming in the summer heat for hours. We would walk into the store, wrapped in our beach towels, and try new flavors each time. We had a few tried and true favorites, but most of the time we rotated our selection. Oh, how fun, it was to treat ourselves.

Well, now as an adult who is health conscious and all too knowing of what daily summer ice cream treats will do to your waistline, I have been forced to find alternate options. But do not feel sad for me, I have been very crafty and creative! So I thought I would share one of my favorites, one of my first ice cream replacements since my love for pineapple runs almost as deep as my desire for ice cream! My easy and fast recipe for Homemade Pineapple Whip!

Pineapple Whip

And when I say easy, I mean easy. You need three things. High powered blender. Frozen pineapple chunks. Unsweetened coconut milk. Obviously, you can doll it up more with sweetness and other flavors, but you really do not have to, it is tasty on its own!

Ingredients

First, pour one cup coconut milk and one cup pineapples into blender or food processor. You may have to continue to tweak and add one or the other to reach desired consistency as you are blending/processing.

As you are blending, you will have to use a wooden spoon to push the pineapple down the sides. It tries to run away and if you do not pause and do this, you will end up with a chunky, unpleasant consistency. The consistency desired is the one pictured above. Continue to pulse or low speed blender/ food processor until desired consistency has been reached. You may need to add more coconut milk to achieve this.

At this point, if you desire a sweeter whip, add stevia. Other options to add would include: unsweet coconut flakes, coconut flavoring, or cool whip.

And there it is. Remove blades and spoon into bowl or container to enjoy with family and friends! It is really THAT simple.

I wish I had a picture of my son and me enjoying this yesterday, but the rotten rascal would not hold still for a picture! I do hope you enjoy this frozen treat as much as my family does in the summer, and learn to tweak it to make it your own!!

PINEAPPLE WHIP

Makes 2-3 servings

2 cups frozen pineapple chunks

1 ½-2 cups unsweet coconut milk

In a food processor or high powered blender (I use a ninja) mix frozen pineapple chunks and coconut milk, blend on low or pulse. You may have to add more milk to the the mix as you go to get the right consistency. You may also have to turn blender or processor off multiple times to spoon mixture towards blades with wooden spoon. Consistency should be smooth and creamy.

Serve immediately for best results. Can be frozen to be enjoyed later, but let sit on counter to thaw prior to enjoying.
