My "I DO NOT HAVE TIME" dinner recipe, no. 1

This recipe is hard for me to write up, mostly because this is my go-to-have-no-time-must-feed-family-and-still-be-healthy meal!! The days when everything around me is chaos and undone, this is my recipe. I do not measure anything, I pour into my crockpot and go. So, I will do my best to add "guesstimate" measures and explain what I do with it!! It is a family favorite, thankfully!!!
Salsa Chicken & Quinoa
Makes 6 servings
Non-stick cook spray
Medium-large salsa of choice ( I really like ones with corn and lots of chunks to them, any salsa works!)
4 large chicken breasts
1c. quinoa
1c. water
Spray crockpot with non-stick, add chicken breasts and quinoa. Cover with salsa and water. Set to low, 6 hours. If home, stir half way in between, if not, stir once arrive home from your busy day!! Try to shred chicken with your spoon.
Once chicken cooked & shredded. I will usually lay out the ingredients for the family to build their own tacos, but here is a recipe if you desire.
Stuffed Tacos-
Makes 6
6 whole grain, low carb tortillas
1c. shred lettuce
1 14.5oz can low sodium black beans, drained
1/4 plain greek yogurt
1/2 c. salsa
Salsa Chicken quinoa
On each warmed tortilla, add in the following order : lettuce, chicken/quinoa, black beans, greek yogurt, salsa.
