Stuffed Bell peppers
Makes 4 servings
1 lb. ground turkey
⅓ c. onion, chopped
Low sodium taco seasoning packet or Mrs. Dash taco seasoning
1 (14.5 oz) can diced tomatoes
4 green peppers, seeds removed
mozzarella cheese
Preheat oven to 350 degrees.
Cut peppers ¼ way down the sides. Hollow out peppers –removing seeds and core. Discard insides, save tops. Cut off any areas of pepper left from the tops (around the stem, discard stem), will add into meat mixture later.
Brown ground turkey over medium heat. Pre-heat oven to 350 degrees. Add onion, diced tomatoes, chopped peppers (from the tops) and spice packet to skillet. Cook for 5-10 minutes, until vegetables are tender.
Spray baking dish with non-stick spray, arrange peppers in a baking dish, and fill the peppers with the mixture.
Bake at 350 degrees 45-60 minutes, until peppers are tender enough for your liking.Remove peppers from oven, top with shredded mozzarella cheese, do not go crazy...Bake for an additional 5 minutes or so, until cheese is melted.
