Banana nut breakfast muffins- gluten free. Dairy free. Paleo friendly (if that's your jam)
4 eggs + 2 egg whites
3/4c coconut flour
1 tsp baking powder
1 tsp salt
1/2 c melted coconut oil
1/2c agave nectar
2 tsp vanilla extract
4 ripe bananas
1/3 c. Walnuts -----------------
mash nanners, add the eggs/egg whites, vanilla, oil, agave. In desperate bowl mix dry ingredients. Pour dry into nanner, agave, oil, egg mix. Stir until thoroughly mixed. Fold in walnuts. Spoon into greased muffin tins. Bake 25-30mins at 350. Cool 10 mins. Easy peasy! Pack 2 into zip locks for your weeks (6 baggies of 2 each) breakfast carb. Don't forget to couple with protein. I choose hard boiled eggs or mini quiches bc they are easy! And who doesn't like easy?!
