Beyond Easy Pumpkin De-Lite

I get it, half of you are like enough already lady, we get it. YOU LOVE pumpkin, while the other half is stoked every time they see the work pumpkin in a title. Well I will try to tame my pumpkin wand after this recipe! MAYBE....
This three ingredient recipe is one I have in my arsenal this time of year for any party, family get-together, or random sweet tooth. I also arm all my meal planners with this recipe, as long as they love pumpkin, in case they are attending some event and all their options are smothered in butter or laced with gobs of sugar. With this inevitable truth, I encourage my meal planners to bring their own easy dessert to the party! Win-win. Fast, cheap, fun, and not a gut buster! So versatile too. If you really want to appear as if you have it all together and Pinterest does not hold a flame to your creativity, carve out a small pumpkin and use as your serving bowl. It is eye catching and pretty simple. I did not have the time to carve a pumpkin for this post, sorry y’all. But at least I left you with the idea?!

Onward to the recipe, as always scroll down to avoid my tips, random comments and musings!
When I say this is easy I am not kidding, this recipe takes about five minutes or less, and this blog will probably be one of my shorter ones!!! I call this Pumpkin Fluff or De-Lite in my meal plans and at parties, but I am sure you could think of a much catchier name!

You will need, 1 small package of sugar free instant vanilla pudding, 1 small can of plain pumpkin puree (be sure it is not pumpkin pie mix), and 1 smaller whipped topping tub. An optional addition to the recipe is pumpkin pie spice, this is not really needed, but sometimes when I have it, I add it.

First you will combine the puree with pudding powder.
No you do not make the pudding first, you add the powder directly to the puree. I usually use a whisk for mixing these two together to be sure they combine well.



Once you have mixed puree and pudding mix, fold in whipped topping. Be sure to thaw your whipped topping completely. If you are topping is not completely you will be left with lumpy bumpy fluff!
After you have folded in your whipped topping thoroughly, you are ready to do with it what you please! A few suggestions I have would be to use as a dip at parties, coupling with gingersnaps, graham crackers, or vanilla wafer cookies. This would be where you would use a pumpkin for serving as suggested previously.
An option for you at home would be to make ice cream sandwiches by placing two tablespoons between two graham crackers. In a freezer-friendly dish line your sandwiches on the bottom. If multiple layers made, be sure to place parchment paper between your sandwiches.
A final suggestion for dinners or parties would be to either make your own or purchase a graham cracker crust to turn your de-lite into a frozen pie. Add to pie crust, freeze until ready to serve. Easy, fast, cheap, and yummy! And it is a lighter option than pumpkin pie!

Ways of tweaking this recipe would be the flavor of instant pudding you select.
Over the years of parties and events, I have tried regular cheesecake, regular vanilla, and sugar free vanilla pudding mixes. All turned out wonderful.
Cheesecake was a family favorite when I took the pie option to a feast! It had a pumpkin cheesecake flavor which proved to be a hit with the Sartain Clan.
Now you can turn anything into a bad thing in regards to portions, so keep control of how many times you go back to the dip or how many sandwiches/ slices you eat!
Pumpkin De-Lite
Yield: 20 servings
1, 3.4 oz package of Sugar Free INSTANT Vanilla Pudding, Cheesecake, or Regular Vanilla
1 cup Pumpkin Puree
1 8oz whipped topping, thawed
½ tsp. Pumpkin Spice (optional)
Combine vanilla pudding powder with pumpkin puree, stir until little to no lumps. Once mixed well, add thawed cool whip, fold into puree mixture to maintain fluff. Store in refridgerator.
Ways to use this recipe:
>Dip for parties with Nilla Wafers, graham crackers, or ginger snaps.
>Ice cream sandwich treat.
Place two tablespoons of mixture between graham crackers, layer in shallow freezer safe pan with parchment paper between each layer.
Place in freezer.
>Pie alternative.
Add mixture to graham cracker crust, freeze. Enjoy.
